How It All Began

How Sumo Started
The first Sumo Sushi was opened and started by Owner and Master Sushi Chef, Jae Koh in 1998, it was located on Green Valley Parkway and Sunset. From a small Japanese restaurant located in a non descript strip mall, it's reputation spread quickly through the Las Vegas valley as the "The sushi place, where you could have traditional Japanese nigiri (raw fish served on rice), or innovative sushi rolls that showcased savory French Asian fusion sauces that added flavor profiles to traditional sushi rolls.

Meet The Owner
Jae learned from the traditional sushi masters in Japan. He would compliment this training by attending the French Culinary Academy, where he learned cooking techniques which explains the French Asian fusion sauces on some of the sushi specialty rolls. He would further enhance his sushi and restaurant skills by working with the legendary Nobu.
